Preheat and prep

- All measurements are in grams for a reason — precision matters here. The balance between the lemon juice acidity, the sugar, and the fat is tight. A kitchen scale is worth using.
- Crush the freeze-dried strawberries to a coarse powder, not a fine dust. Some texture in the dough is part of how the strawberry flavor registers.
- The glaze is optional but it adds a vivid acidity that sharpens the lemon flavor on the finish. If you make it, drizzle it over completely cooled cookies — the glaze will not set properly on warm cookies.
